After eighty days in the barrel, our porter has seen the light of day again. Delicious notes of Zinfindel with mild oak components. As the days go by it continues to evolve as the flavors meld together. The porter flavors of roast and chocolate were at first muted by strong wine notes but now the beer is starting to come back to the forefront as the dominant flavors. The other half of my portion I added 4 ounces of cocoa nibs to the keg. The dark chocolate is melding nicely with the wine, oak and porter. My thoughts on this would be to give it the character of a port wine. The flavors are good and it is evolving nicely.
